Simple Sheetpan Pancakes From Scratch!
Quickly throwing this recipe up because so many of you have been asking! It’s the same as my fave simple pancakes from scratch, but now with the easiest sheet pan version, plus lots of tips.
I’ve included both the traditional ingredient list, as well as our new favorite egg free version. Going egg free is a great way to simplify and speed up this family favorite recipe.
And a simple pancake recipe is perfect for lazy mornings when you don’t feel like flipping, but still want all the fluffy goodness of pancakes.

Adding in a little tip for anyone brave enough to use the Convection feature on their oven. I have grown to LOVE using convection, especially when baking.
Convection Oven Tips
Convection circulates air in the oven throughout the baking process. Meaning a more even cooking temperature, and a more even bake for your food!
My main convection tip: Keep the same cooking temperature as the traditional recipe, and just check your food about 5 minutes sooner than the recipe suggests.
Every oven is different though! So make sure to check yours regularly the first few times you use to the Convection feature to get a feel for how your oven heats and bakes.

Baking pancakes in a sheet pan is the quickest way to ease up your breakfast routine. Mix, spread, bake, serve. No standing at the oven to flip a million pancakes. This has quickly become one of my favorite hacks as a mom to four kids!
Sheet Pan Pancake Tips
When baking sheet pan pancakes, use parchment paper to line your pan. No greasing required.
Simply pull your large pancake out of the oven, roll a pizza cutter back and forth to cut your pancake, and serve!
It’s really that simple!

Busy Mom Tips
Sometimes I double the batch and make a mass amount of these pancakes. They keep in the fridge for a week, and freeze even longer.
Diverse the options by doing various toppings on sections of the pan.
Here would be a great spot to put a cool photo to demonstrate this tip! But alas, I am also one of you. A busy mom. Who barely had time to remember the sprinkles on this morning’s pancakes. So for now, please use your imaginations. 😉
They’re not just for breakfast. Sheet pan pancakes are great for dinner too. Pair with some scrambled eggs + a smoothie and your family is good to go! This is my default “what’s for dinner tonight” hack when I can’t scrounge up anything else!


Simple Sheet Pan PanCAKES from Scratch!
Equipment
- 1 XL Baking Sheet (I use 13" x 18" sheet pan)
Ingredients
Wet Ingredients
- 2.25 cups milk
- 2 TBSP distilled white vinegar
- .25 cup butter melted can sub vegetable oil
- 1 tsp vanilla
Dry Ingredients
- 2.5 cups flour
- .5 cup sugar
- 3 tsp baking powder
- 1 tsp salt
- 2 tsp baking soda
OPTIONAL
- toppings of choice
Instructions
Batter Prep
- Mix wet ingredients.
- Add dry ingredients into wet ingredients, mix until combined.
Sheet Pan Pancakes
- Preheat oven to 350℉ (use convection option if you'd like for a more even bake!).
- Line cookie sheet/jelly roll pan with parchment paper, or grease thoroughly.
- Pour prepped batter into pan.
- Add toppings onto pancake batter.
- Bake in oven for 20 minutes, or until top is golden brown, and toothpick in center comes out clean.
- *NOTE CONVECTION USERS! Check pancakes at 15 minutes to see if they're done!
Notes
Egg Batter Substitute
Ingredients
- 2.5 cups flour
- 1/2 cup sugar
- 4 tsp baking powder
- 1 tsp salt
- 3 eggs beaten
- 2 cups milk
- 1/4 cup butter, melted (can sub cooking oil)
- 1 tsp vanilla
Traditional Ingredient Baking Instructions
Directions
- Mix wet ingredients.
- Add dry ingredients to wet, and mix.
- If using toppings, mix into batter.
- Scoop 1/4 cup batter onto preheated and oiled griddle.
- Flip when batter bubbles evenly.
- Enjoy!

This was so easy, convenient, and tasty! I did banana slices/chocolate chips, blueberries, and chocolate chips alone as the toppings (divided in 3 areas). We had fresh whipped cream, maple syrup and strawberry slices as toppings after they were cooked. It was a huge hit! Thank you so much!
BTW, I didn’t have white vinegar, but did have apple cider vinegar. Made the substitute and you could not taste the swap.
One pan of pancakes, one pan of hash brown patties, and one pan of bacon (already cooked) was so easy for a crowd.

Can I use a pancake mix and if so, does it change anything?

I halved the recipe and used a 10.25*15.25 pan (cause that’s what I had). I baked for 15 minutes and then broiled the top for about a minute (solely for cosmetic purposes). They’re a little thin because the proportions are off from the original recipe, but absolutely delicious and super easy! I cut it into 16 “pancakes” and I’m pumped to have them ready for the week. Thanks for this!

Can I make this using pancake mix ? It just calls for adding water and mixing .

I would definitely think so! This from scratch recipe transfers to griddle single pancakes well, and is a traditional pancake recipe. So I would think a box mix would transfer to a sheetpan just the same!
